PREPARATION METHOD

• Defrost the grains. • Prepare the vinaigrette as per basic recipe and transfer to a squeezy bottle. • Slice the tomatoes in half. • Slice the spring onions at an angle. • Blanche the broccoli until tender, cool and store ready for service. • Finely slice the cucumber into ribbons using the mandolin. • Please complete training short 4.32 Japanese mandolin before using this piece of equipment.
