PREPARATION METHOD

• Defrost burger and vegan bun. • Prepare the pickled onions as per basic. • Slice each tomato into 5 - 6 even slices ensuring to remove the top and the bottom of the tomato. • Remove the leaves from the lettuce. • Finely slice the gherkin using the mandolin. • Please complete training short 4.32 Japanese mandolin before using this piece of equipment.

SERVICE METHOD & PRESENTATION

• Cut the avocado in half, remove the stone, peel and crush with a fork. • Lower the Chick’N into the vegan fryer for approx 6 minutes, until golden and crisp. Place the chicken onto a tray, add the cheese slice and place under the overhead grill to melt. • Toast the bun under the overhead grill. • Spread the base of the bun with vegan mayo. • Assembly: base - vegan mayo - lettuce - tomato - burger - vegan cheese - onion - avocado - sweet chilli - lid - gherkin - skewer.
