THE PLANETARY MIXER
PURPOSE OF THE TRAINING EXERCISE: To ensure the team members understand the importance of keeping the planetary mixer clean.
TRAINING AIDS: Company approved multi-purpose detergent, manual pot wash detergent and sanitiser Clean yellow cloth or paper towels PPE – Rubber gloves or white disposable gloves and apron TRAINING METHOD: This is a practical training exercise. The trainer should demonstrate how to clean the planetary mixer to the group whilst referring to these training notes
ASK QUESTION TO GROUP: Why is it important to clean the planetary mixer after every use? CONFIRM CORRECT ANSWER: Reduce the risk of cross contamination To ensure the food is properly mixed Improve the quality of the food To ensure the mixer works effectively Reduce the risk of fires It is a legal requirement to keep all food equipment clean.
How to clean the Planetary mixer: Ensure machine is switched off before cleaning starts Remove bowl, whisk/hook and place in a sink of hot soapy hot soapy manual pot wash detergent Scrub these elements with a green scourer to remove any build up of food debris Rinse with warm water, check all food residue has been removed Leave to air dry Spray the outside of the unit, stand ,beater shaft and guard with multi- purpose detergent Wipe clean with a damp yellow cloth then rinse and wipe over with paper roll. Ensure all buttons and dials are clean Apply sanitiser to all areas and leave for one minute. Wipe over with paper roll and allow to air dry Replace all items once dry
