How to clean the Cheese Blocker: Remove the thumb screws and the front plate from the base assembly Wipe off any food debris on the base assembly, cutting bow and base plate with hot water and a yellow cloth. Spray base assembly, cutting bow and base plate with detergent and wipe clean with a clean yellow cloth. Apply sanitiser and leave for one minute- wipe over with paper roll. Allow to air dry Reinstall front plate and thumb screw Replacing the Cutting Wire Wash new cutting wire with hot soapy manual pot wash detergent and a clean yellow cloth, rinse thoroughly to remove the thin protective film Handle with caution blades are sharp and can cause cuts Loosen the wing nuts holding the eye bolt and the “l” bolt. NB it is not necessary to remove
them all the way to replace the cutting wire. Remove and discard the old cutting wire Place the loops of the new cutting wire onto the eye bolt and the “l” bolt Tighten the wing nuts and the cutting wire Remember report any defects to your manager.
Conclude the training exercise by allowing the trainees to practice cleaning and re- assembling the Cheese Blocker
