THE CONTACT GRILL
PURPOSE OF THE TRAINING EXERCISE: To ensure the team members are aware of the safe use of the contact grill.
TRAINING AIDS: Contact Grill Company approved multi-purpose detergent and sanitiser
Yellow Disposable cloth Disposable Paper Towel Grill scraper
TRAINING METHOD: This is a practical training exercise. The trainer should demonstrate how to use the contact grill to the group whilst referring to these training notes
ASK QUESTION TO GROUP: Why do we need to clean the Grill after every use?
CONFIRM CORRECT ANSWER: Reduce the risk of bacteria harbourage To ensure the Grill works effectively To avoid risk of foreign body contamination To avoid any allergies through cross contamination If pieces of carbon get stuck onto food being cooked they then could be eaten by a guest causing damage or illness To ensure the food is properly cooked Reduce the risk of fires It is a legal requirement to keep equipment clean.
Cleaning of the Contact Grill can be carried out during the day where necessary, but the grill must be fully cleaned a minimum of once per day.
Allow the grill to cool sufficiently to safely remove the grill plates Using the company approved detergent spray, spray the handles, knobs, outside and base of the contact grill and wipe with a clean damp yellow cloth Using a clean grill scraper, scrape food debris off the grill plates Spray the handles and knobs with company approved sanitiser allowing correct contact time and wipe clean with a yellow cloth Empty and clean the catch tray located at the back of the grill Replace grill plates
