Sauce Labels Bottles of sauces when available on the table, as per the brand offer, that are shelf stable at ambient after opening, should have a small date label applied to the bottom of the bottle recording  The opening date  Use by date – the best before or use by date should be checked and this should always be used first.  Initials of the person opening it.  The maximum shelf life is 28 days.

INFORM THE TEAM: To make sure that we do not break the law, we have a policy that all food stored in chillers must be clearly labelled with a ‘use by date’ provided by the manufacturer, with DAY DOTS, a product label or sauce label CONCLUDE BY SUMMARISING:  The Manager will check dates on a regular basis and record weekly on the manager checklist  “USE BY” labels and DAY DOTS must be checked in fridges every day. Any food with a daydot showing that day or is on the last day of it’s shelf life, must be discarded and recorded as waste  Remember to check the BEST BEFORE DATES on products stored in the dry store Manager to record the training
